This is a recipe that my family will eat a couple times per month. We had it last night for dinner in fact. 🙂
Total Cost for this Meal:
At Save-A-Lot I bought some bags of brown rice for .79 per bag. I used half a bag for my family = .40
The Chicken was bought at Albertsons for $1.88 lb -I used 1.5 lbs = $2.82
The Can of Pineapple was .79 at Winco — all other ingredients I just always have on hand.
Total cost= $4.01 for my family of 6 for dinner!
This is one of my thrifty weeknight meals. Enjoy 🙂

Honey Lime Chicken Recipe

One of my family's favorite dinners, honey lime chicken is simple to make and delicious!
Ingredients
- 4 Chicken Breasts cut into strips
- 1 1/2 tsp garlic salt
- 1 tbsp Oil
- 20 oz can pineapple tidbits keep the juice!
- 1/4 cup honey
- 3 tbsp Lime juice
- 2 tbsp Soy Sauce
- 2 tsp Corn starch
Instructions
Cut the chicken into strips or bite sized pieces and sprinkle with garlic salt.
Heat oil in a skillet over med-high and add chicken.
Cook chicken until golden brown.
Drain the pineapple, keeping the juices.
Add 1/4 cup of the pineapple juice to the skillet.
Cover and simmer 6-8 minutes.
Remove the chicken from the pan.
Add honey, lime juice, soy sauce, cornstarch and remainder of pineapple juice to the pan.
Bring to a boil stirring constantly.
Cook and stir until thick and clear, about one minute.
Add chicken and pineapple tidbits last and heat through.
Serve over hot rice and it's cool to garnish with lime wedges or Chow Mein noodles.
To freeze this recipe, cook it all up as directed above. Then let it cool, and add it to a gallon size freezer bag. Label and freeze. Then warm it up and serve with fresh hot rice.

I was a bit worried that it would come out sweet (a la sweet-and-sour sauce) with the amount of honey that it called for, but nope! The garlic salt did a great job of balancing it out. Definitely keeping this one as a favorite for the future.Reply

I know this post is from 2013, but really-
A bag of rice (1lb) has approximately 10 servings. Why is 5 servings of rice for 6 people that include children, that crazy? Especially when served with other food…Reply

I made this but was worried because I was out of any kind of citrus and I have a Very picky husband. In fact he often crinkled his nose if I even say We’re having chicken!
He, my 97-year-old mother, and I all loved it! We all talked about how the pineapples reminders us of grilled pineapples which took its own turn in the conversation! I’m making again!
As for serving size, we ate more than usual, but had about 2 servings left.Reply

Hi Karrie,
I’ve made this a few times & my family really enjoys it. I did make some changes with good results. I brined the chicken breasts before cooking so they didn’t dry out. My guys like this dish a little more saucy, so I used a small can of pineapple juice in addition to the juice from the pineapple chunks. At the end, I tossed in some cashew halves. Served it over brown rice & my guys loved it. Another easy, fast weekday meal. Thanks !!Reply

I’m having a little one in September and I already have 3 kids. I’m trying to get in the habit of doing freezer meal by the week and building from there.
how do you reheat meals coming from the freezer. I am new to this and I have never done leftovers.

Take the freezer meal out of the freezer the night before and then stick in a skillet to quickly reheat it. Thawing helps it cook faster.

But doesn’t your recipe say to cook it all up before putting it in the freezer?

Yes, it’s precooked first, so you just thaw and reheat it. 🙂

Thanks for posting this recipe. It looked really nice but unfortunately my partner and I just didn’t like it. I think it was the honey and citrus combination. It made the dish taste like chicken with cough lollies.
